As a mom, lunch is always one of those things that we don’t always get every day. We get so busy taking care of our kids and trying to juggle the other daily tasks instead of taking care of ourselves. And if we do get lunch, it’s easy to just grab a snack instead so we don’t have to stop and take the time to make something. Or we snack off our kids plates (am I right?). I’ve always been really into eating healthy and I try to watch what I eat. I haven’t gotten into counting macros or going 100% paleo or anything like that but I just try to eat low carb, high protein, low sugar, and lots of fruits and vegetables.
Here is one of the lunches I’ve been eating lately that is pretty quick and easy to make
Avocado egg salad
You can play around with other seasonings too! I like to add a little bit of garlic salt for more flavor.
Then top that on a piece of whole wheat bread or eat it straight from the bowl! Sometimes I like to scoop it with pretzel crisps or you could also do whole wheat crackers.
It’s that easy (as long as you have hard boiled eggs on hand)! I like to keep at least 6 hard boiled eggs in my refrigerator regularly for quick protein. Either on their own, on salads, or for egg salad like this!
